Carciofi Alla Romano (artichokes-Roman)

6 artichokes
juice of 1 lemon
1/2 C olive oil
Battuto;
6 sprigs of mint
1/2 clove garlic
6 sprigs parsley
1 tsp salt
freshly ground black pepper.Recipe
Prepare artichokes. Remove the chokes and drop into lemon water to prevent browning.
Meanwhile, make the battuto. Drain the artichokes and put a pinch or 2 of the battuto inside.
Place the artichokes in a pot, on top of the olive oil and 1 C water, Stem ends up. Cover the pot. Bring to a boil and reduce heat to medium.
Cook 20 minutes, remove lid. Salt the artichokes and cook, reducing the liquids almost away.
Serve with the pan juices poured over the artichokes.
