Oxtail stew, cowhands style
List of Ingredients
3 pounds oxtail
3-4 T olive oil
1 C dry white wine
4 C cut up Roma tomatoes
2-3 tsp salt
beef broth
1 bunch celery, cut in 2 inch chunks
Recipe
Make a battuto of 1 slice lean salt pork, half of an onion, half of a stalk of celery and 1/2-1 cloves garlic, all minced down to a paste. Saute it in the olive oil until golden.
Add the oxtail slices over medium high heat until brown on all sides. Add the wine and cook to evaporate it. Add tomatoes, mashing them as they cook. Add broth. Season and bring to the boil. reduce heat and simmer 2 hours (or 3) until the meat begins to fall from the bones. Stir occasionally during cooking. thin the sauce if necessary with broth.
Wash and chop the celery and add it to the stew. Cook 10-15 minutes.
Serve with Italian bread and plenty of napkins.
