Crema Di Sedani (cream of celery soup)

List of Ingredients
2 tablespoon butter
2 C thinly sliced celery
1 large leek, thinly sliced
1 medium potato, diced
1 1/2 qts vegetable stock
1 egg yolk
1 C light cream
1/4 C freshly grated Parmesan cheese
1/4 tsp freshly grated nutmeg
salt
pepper,freshly ground
Recipe
heat the butter in a large pot and cook the celery, leek and potato over medium heat 3 minutes. Add broth and bring to a boil, cover and simmer over reduced heat for half an hour.
Force through a sieve or puree. Return to pot.
Beat the egg yolk, cream and cheese together. Beat 1/2 cup of the hot soup into the egg mixture. Invert back into the soup. Add nutmeg, salt and pepper. Heat to just below a simmer.
Serve hot.
