2 C ricotta cheese
2 eggs
1/2 C freshly grated Parmesan cheese
1/4 C flour
Salt
Fresh ground black pepper
Salt
1/8 tsp nutmegRecipe
Combine cheeses, egg and flour. Season to taste. Add nutmeg, blend well.
Form into small balls the size of a walnut. Roll in flour and deep fry in oil at 275 degrees F. until golden brown. Drain on absorbent paper.
