1/2 pound pork or ham rind
3 T olive oil
2 C coarsely chopped Roma tomatoes
Salt
freshly ground black pepper
2 cans cannellini beansRecipe
Battuto;
2 slices lean salt pork
1 garlic clove
1 small onion
1 T chopped parsley
Cut the rind into 1x2 inch pieces. Place in a pot with 2 quarts water Boil covered at least 2 hours, or until tender.
Make the battuto with the salt pork, garlic, onion and parsley by mincing the salt pork with rest of battuto ingredients. saute until golden in a large pot.
Now add the Roma tomatoes, add the beans with the liquid from the beans, salt and pepper to taste. Add the coked rind. cook half an hour.to reduce the sauce and blend flavors. Serve hot.
