    1 loaf.-preheat oven to 400 degrees F.

    List of Ingredients




    1 pkg dry yeast
    1 C tepid water
    3 1/2-4 C hard wheat flour
    5 T olive oil
    3/4 C sliced Greek olives
    1 tsp salt
    cornmeal

    Recipe



    Dissolve yeast in the water. Wait 10 minutes.
    Stir in 2 cups flour and beat to a sticky mass. Sprinkle with some of the flour. Sprinkle the work surface also. Knead until smooth and elastic. Oil bowl, place dough in. Cover and let rise 1 hour, until doubled.
    Punch dough down and fold in 4 T olive oil, olives and salt, knead again on floured surface. Roll out into a 10-12 inch circle. Place on well oiled pizza pan (15 inch), dusted with cornmeal.
    Brush top of focaccia with 1 tablespoon olive oil. Let rise 1 hour or until doubled.
    Bake at 400 degrees F. for one half hour or until top is golden.
