Fritelle Di Patate (potato pancake)

List of Ingredients
1 pound potatoes
2 T unbleached flour
1/4 C freshly grated Parmesan
1 egg
1 handful parsley, finely chopped
2 T fresh basil
salt
freshly ground black pepper
3 T olive oilRecipe
Peel and grate the potatoes on a coarse grater into a bowl. Add flour, Parmesan, egg, parsley, basil and seasonings. Mix well.
Heat the oil in a oven proof pan, place potato mixture in evenly. Cook for 15 minutes until bottom is nicely browned. Turn broiler to high. set pan in the lower third of the the broiler. (12 inches from heat source) Broil 8-10 minutes, until top is golden brown.
