    1 pound small white mushrooms
    1/2 C olive oil
    1 medium garlic clove
    1/2 tsp salt (to taste)
    1/4 of a lemon
    1 T chopped parsley

    Recipe



    remove stems from mushrooms and reserve. trim bottom ends of stems.
    Heat the oil and saute garlic over medium heat until golden. remove and discard. Add the mushrooms and stems, increasing the heat and cook quickly. Stir while cooking. When they begin to give up their juices, add the salt. When tender, 4-5 minutes, add lemon juice, Squeezed from the 1/4 lemon. Stir well. Add the parsley and stir. Remove from heat. Chill and serve cold.
