    List of Ingredients




    3 medium onions
    3 T olive oil
    2 slices salt pork
    salt to taste (opt)
    fresh black pepper
    7 eggs

    Recipe



    Slice onion very thinly to end with about 3 cups. Saute them in olive oil, add the diced salt pork in tiny cubes. Stir and cook until the onions are translucent. Season with salt and pepper.
    Beat the eggs well and add to the pan, stir gently (once)and raise the heat, cooking quickly. When bottom is solidified and browned, turn and cook other side.

    Var;
    Try Burmuda onion.
    omit salt pork and sub. prosciutto.
    omit meat and add mushroom, thinly sliced and 5 sprigs parsley.
    Spinach and or zucchini and grated Parmesan cheese
