    Italian Salsa Verde (green sauce)

    List of Ingredients




    2 C parsley, chopped
    2 T capers, chopped
    1 garlic clove, chopped
    1/2 C olive oil
    1/2 C wine vinegar
    salt to taste

    Recipe



    Chop the first 3 ingredients into small bits. Place in mortar and pestle and render to a paste. Add the olive oil, 1 tablespoon at a time and grind to a thick paste. Then add the vinegar a little at a time to dilute the sauce to a spoonable consistency.
    refrigerate until ready to use, with a drop or 2 of olive oil on the top. (a good keeper).
    To use bring to room temperature and stir vigorously.

    Var;
    omit salt and grind in 2 anchovy fillets. Substitute lemon for vinegar.
