Mantecato Di Patate (whipped potatoes)

6-8 baking potatoes
1/4-1/2 C milk
1 tsp nutmeg
4 T butter
2 eggsRecipe
Peel the potatoes and cut into quarters. Put them in cold salted water. Cook on high heat, bring to a boil, reduce heat and cook 20 minutes.
Drain and put them into the pan over low heat. Beat until smooth, adding milk slowly, with the butter and nutmeg, using only as much milk as desired.
Add the eggs, beating, and continue to beat 2 minutes. Serve with any meat sauce.
