    Make the battuto for seasoning the soup;
    2 slice lean salt pork
    1 onion
    1 celery stalk
    2 small carrots
    8 sprigs parsley
    1 sage leaf
    4 T olive oil
    Chop the seasonings to a paste.
    Mince the salt pork with next 4 ingredients. Saute until golden, in the olive oil, over medium heat. Turn off the heat. This is the base for soup.

    List of Ingredients




    2 1/2 qts hot water
    3 tsp salt
    2 stalks celery, chopped
    3 potatoes, chopped
    1/4 cauliflower, in florets
    2 carrots, chopped
    2 medium zucchini, in half inch chop
    1/4 small cabbage, in one eighth bits
    1/4 head escarole, in half inch pieces
    1/4 head curly endive, half inch pieces
    1 C fresh spinach, half inch pieces
    1/2 small onion, slivered
    3 peeled plum tomatoes
    1 C fresh peas
    1 C rice or small pasta
    1/2 C canned chick peas with juice
    1/2 C kidney or shell beans
    6 slices Italian bread
    3-4 T grated Parmesan cheese

    Add hot water to the battuto in the pan, with salt. Bring to the boil. Add celery, carrots, 2 potatoes and cauliflower. Boil 10 minutes.
    Slice the last potato paper thin and add to the pot. Add zucchini, cabbage,escarole, endive,and spinach. Add onion, tomatoes and peas. lower the heat and simmer 15 minutes.
    Add rice or pasta. Add chickpeas, mashing some. Add shell beans. Cook 15-25 minutes or until thickened.
    Toast the bread and place a slice in the bottom of a soup plate. Sprinkle with Parmesan cheese and ladle soup over.
