    Polenta pie with mushrooms
    Serves 6
    Preheat oven to 375 degrees F.
    if you have saved some polenta in a bread pan to set up, use that.

    List of Ingredients




    1 recipe polenta
    1 T butter
    1 T olive oil
    1 pound mushrooms, thinly sliced
    2 C bechamel sauce
    1/2 C grated Gruyere cheese
    1 C freshly grated Parmesan cheese

    Recipe



    Cook polenta and spread out to 1/2 inch thick. When cold cut it into slices.
    Saute the mushrooms in butter and olive oil in fry pan. 4 minutes.
    Prepare Bechamel sauce. Remove from heat and stir in Gruyere.
    Butter a baking dish and arrange a layer of mushrooms, spread the cheese sauce on top and sprinkle with Parmesan cheese.
    Bake at 375 degrees F. until golden on top. (20 minutes ?).
