fried polenta sandwiches

1 recipe polenta
1/2 pound Fontina cheese
flour
2 eggs, beaten,
bread crumbs
oil for fryingRecipe
Spread the hot polenta to 1/2 inch thick. cut into 3 inch rounds with a glass or cookie cutter. Cut the rounds of cheese the same size. Place cheese on one round of polenta and top with another. Press edges together so cheese doesn't run.
Dip the sandwich into flour, then beaten egg, then bread crumbs. fry in hot oil, on both sides until golden brown on. Drain on absorbent paper. Serve hot.
