    1 large frying chicken
    3 T olive oil
    1 garlic clove
    2 tsp rosemary
    1 1/2 tsp salt
    1/4 C vinegar
    1/2 C dry white wine

    Recipe



    Cut chicken into 8-12 pieces.
    Heat the olive oil with the garlic in a deep sided pan, when the garlic is golden, discard it. Add the chicken, rosemary and salt. Brown thoroughly on all sides. When a deep golden brown, add the wine vinegar, quickly cover the pan until the sizzling stops, then add the wine and cook until it evaporates. Simmer 20 minutes, until chicken is tender.
    Place on a platter in a warm oven.
    Add 1 tablespoon water to the juices in the pan, increase heat, scrape the bottom and sides of the pan to scrape up the bits. Sauce should be golden amber. Pour sauce over the chicken. Serve with Italian bread and roasted potatoes.
