Pork and Olive Stew

List of Ingredients
2 pounds lean pork, in 3/4 inch cube
2-3 T olive oil
1/4 tsp rosemary
1 garlic clove, pressed
2 C meatless Italian Gravy
1/4 C water
1 7oz can olives, drained
3/4 tsp saltRecipe
Brown meat in the olive oil. Add remaining ingredients. Cover and simmer for 1 hour.
Meatless Italian Gravy
Makes 2 1/2 quarts.
1 C dried mushrooms
Hot water
3 T olive oil
3 C chopped parsley
2-3 stalks celery, chopped
1 medium onion, chopped
2 garlic cloves, minced
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp sage
32 oz tomato sauce
2 pounds canned solid pack tomatoes, chopped
1 chili pequin
1 1/2 tsp salt
Soak mushrooms in the hot water, (follow package directions for time.)
In a heavy stock pot cook the next 4 ingredients and the seasonings in olive oil until the vegetables are tender. Add next 3 ingredients.
Drain the mushrooms, reserving liquid. Chop the mushrooms and add with the reserved liquid. Cover and simmer for 3 hours. Add salt last 15 minutes.
Store in fridge up to 3 weeks. (or freeze.)
