    Rice with shrimp, Venetian style

    List of Ingredients




    1 medium onion
    4 fresh basil leaves, minced
    1/2 garlic clove,minced
    4-5 sprigs parsley, minced
    1 pound shrimp
    5 C boiling water
    1 tsp salt
    1 cube butter
    3/4 C olive oil
    1 1/2 C long grain rice
    salt to taste

    Recipe



    Add the first 4 minced ingredients with the shrimp to the boiling water and cook until shrimp shells turn pink.
    Remove shrimp, cool and peel. Set aside. Drop the shells back into the pot of water and return to a boil. Simmer 15 minutes. Strain through a cheesecloth lined sieve, reserving the shrimp broth.
    Remove veins from shrimp. Saute shrimp 3 minutes in a large sauce pan in the butter and oil.
    Add the rice and 2 cups of the reserved shrimp broth to the pan. Cook, covered over medium heat and steam for about 20 minutes. Add more broth during cooking as needed, 1/2 C at a time.
