    Preheat oven to 350 degrees F.

    List of Ingredients




    flour
    3 C ricotta cheese
    3 T hard wheat flour
    1/3 C honey
    3 eggs, separated
    1/4 C light raisins
    2 T very small dice candied fruit
    3 T rum or sweet Marsala wine
    1/2 tsp vanilla extract
    grated rind of 1 lemon.

    Recipe



    Butter an 8 inch spring form pan and dust with flour.
    Combine ricotta, hard wheat flour, honey and egg yolks in a large bowl and beat until very smooth.
    Stir in the raisins, dried fruit, rum, vanilla and lemon rind.
    Beat egg whites stiff and fold into the mixture.
    Pour into the prepared pan.
    Bake in a preheated 350 degree oven for 40-45 minutes, or until top is golden brown, and tests as for cake.
