3 eggs
6 T Parmesan cheese
nutmeg
1 1/2 qts chicken broth
1 1/2 qts beef brothRecipe
Beat the eggs well with 1/2 the Parmesan cheese and a dash of nutmeg.
Bring the broth to a boil and pour the egg mixture in a thin stream into the broth, stirring slowly, for half a minute. You want the result to be raggedy bits of egg.
Remove from heat. Serve with Parmesan cheese on the side.
