Trippa alla Romana-(tripe)

Recipe Introduction
Tripe, Roman style.
List of Ingredients
2 pounds tripe
1 onion
1 carrot
1 stalk celery with leaves
2 tsp salt
Battuto;
2 slices lean salt pork
1 large onion
1/2carrot
1/2 stalk celery
2-3 sprigs parsley
Sauce;
1/4 C olive oil
2 C peeled Roma tomatoes
2 tsp salt
freshly ground black pepper
3-4 mint leaves
2-3 T grated Romano cheese
Recipe
Use prepared tripe, Place in a pot with the onion, carrot, celery and leaves. Salt it and add water to cover. Bring to a boil. Simmer at least half an hour, or until tender. Remove tripe, cool some and cut into quarter inch wide strips by 3 inches long
Meanwhile, make the battuto; Chop the battuto ingredients finely. Saute until golden in the olive oil, over medium heat.
For the sauce, Add the tomatoes, salt and pepper. Bring to a boil in the large pot. Simmer 5 minutes. add tripe and cook at a slow boil 1 hour, until the sauce has thickened and darkened. Add one quarter cup water if needed. Add mint, simmer 5 minutes. Serve with Romano cheese on the side.
