Thin spaghetti, Sailors style
List of Ingredients
1/4 C olive oil
1 garlic clove, peeled
1 red pepper pod, seeded
3 C plum tomatoes, peeled
1/2 tsp oregano
1 T chopped parsley
1 tsp salt
4-6 tsp grated ParmesanRecipe
Heat the oil in a small fry pan, over medium heat with the garlic and pepper. When the garlic is golden and the pepper deep brown, remove them. Discard.
Cool the pan and add tomatoes, crushing them as you stir in. Add the oregano and bring back to a boil. Simmer 20 minutes, or until thickened. 20 minutes.Add parsley and salt.
Cook and drain the vermicelli, place on a platter and cover with sauce. Gently turn over and over. Sprinkle with cheese if desired. Serve hot.
