Flor de Mayo Beans, Basic

List of Ingredients
1 1/2 cups dried, flor de mayo beans
3-4 cups water
1 medium onion, minced
1 tablespoon bacon fat
salt and pepper to taste
Recipe
Cook the beans in water until tender, up to two and a half hours. (depending on how old the beans are) Add rest of ingredients.
Serve as is, or mash for refried beans. If mashing drain most of the liquid and add one more tablespoon bacon fat.
If Mexican flor de mayo beans are not available you can substitute small navy beans or pink beans.
