Chick-Pea Salad

6 oz. chorizo sausage
1 1-lb. 4-oz. can chick-peas, drained
1 sm. onion, chopped
1/4 C sliced sweet gherkins
1/4 C sweet pickle liquid
2-3 tsp. salt
Dash of pepper
1 tbsp. wine vinegar

Recipe
Place sausage in skillet with water to cover. Bring to a boil. Simmer for 5 minutes. Drain. Slice sausage; fry in skillet until browned. Drain on paper towels. Combine sausage and next 7 ingredients in salad bowl; mix lightly. Garnish with pimento; chill until ready to serve.
