Lima Casserole or Army Hash

Serves 6-8.
List of Ingredients
2 C baby Lima beans
6 strips cooked bacon, (diced)
2 C corn
1/4 C chopped onion
2 C tomato Puree
3 T pimiento
1/4 C chopped celery
salt
pepperRecipe
Soak Lima beans 2 hour to overnight in water to cover 3 inches above beans. (1 quart)
Bring to a boil and simmer 1 hour or until beans are tender. Add rest of ingredients. 1/2 C aged cheddar, grated, can be used as a topping.
Substitute ham or salt pork for bacon if desired.
Place in a casserole and bake at 350 degrees F. for 45 minutes.
