Refried Beans

1 1/2 pounds pinto beans
8 c cold water
2 medium size onions
3/4 C bacon fat (or lard)
salt to tasteRecipe
Soak the beans overnight in cold water, to cover. bring to a boil, lower heat and simmer, partially covered for 2 1/2-3 hours, or until very tender. Add hot water as necessary.
Drain the beans, reserving liquid for another use. Mash half of the beans.
Saute the onions in the fat. Mix this into the beans with the unmashed beans. (mash all if desired).
