Roman bean casserole

- 1 T olive oil
- 2 C minced onion
- 2 T minced fresh ginger
- 2 tsp fennel seed
- 2 T minced garlic
- 1/2 tsp allspice
- 1 tsp dried thyme
- 2 tsp salt
- 2 T yellow mustard
- 1/4 C ketchup
- 1 tsp minced jajapeno pepper
- 1 C water
- 2 tsp almond extract
- 2 T brown sugar
- 4-14oz cans Roman beans, drained
Instructions
- Preheat oven to 350 degrees F. Heat oil in a heavy bottomed fry pan. Add onion, fennel seed and minced ginger. Saute over strong heat for 5 minutes, then lower heat. Add garlic, allspice and thyme. Cook 2-3 minutes
- Stir in mustard, ketchup, jalapeno, almond ext. and water. cook 5 minutes.
- Pour beans in a 9x13 inch baking dish. Pour in sauce, cover with foil and bake 45 minutes.
- Cool 20 minutes before serving
