    Fava Beans, Spiced

    List of Ingredients

    1 (28oz) can fava beans
    salt, to taste
    4 tblsp butter
    1 C minced onion
    2 minced scallions
    1 tblsp minced fresh rosemary
    2 tblsp minced garlic
    2 pinches red pepper flakes
    2 tblsp minced fresh parsley
    1 tblsp minced fresh savory
    1/4 tsp lemon peel, minced fine

    Recipe

    Melt butter and saute the onion, scallions, garlic and red pepper flakes. Reduce to medium heat. Add remaining ingredients. Cook just until the beans are heated through. Serve as an appetizer or as a side dish in place of other legumes.
    Variation; This makes a lot, you can run half of the beans through a food processor to a paste and use it as a dip, or spread.
    Fava beans in 28oz cans can be found under Sahara Brand from Indo European, they are baby favas.
