1/4 pound roughly chopped meaty ham
1 1/2 C yellow peas
2 qts water
heaping tsp dried mint or tarragon
Recipe
Rinse and soak the peas overnight. Drain.
chop the ham in rough pieces, fry up and set aside.
Bring the peas in the 2 quarts water to a boil. Add mint. Reduce heat and simmer, partially covered with a lid for 2 1/2-3 hours. Puree or mash the peas.
Serve hot with ham sprinkled on top.
