    List of Ingredients




    For the shell;
    2 1/4 cups water
    1 cup cornmeal
    1 teaspoon butter
    1 tsp salt, or to taste

    For the filling;
    1 tablespoon oil
    1/2 cup, chopped onion
    1/4 cup bell pepper
    1 pound ground beef
    2 tablespoons chili powder
    a 10 ounce can of RO-TEL tomatoes and green chilies
    6 green olives, chopped fine
    salt to taste
    pepper to taste
    2 cups grated pepper jack cheese, for top

    Preheat oven to 350 degrees. Use a deep dish pie plate.
    Make the corn meal following package directions. (finer cornmeal cooks 5 minutes, coarser can take much longer.) Immediatly put it into the pie dish and spread with a spatula to cover bottom and side of dish about 1/4 to 1/2 inch thick.
    Saute the onion and bell pepper in the oil. brown the ground beef in the same skillet. Combine all of the filling mixture and pour it into the pie shell. Top with the cheese and bake thirty to fifty minutes.
