    Serves 4.

    List of Ingredients




    1 pound (450 g) beef rump steak
    4 T (60ml) vegetable oil
    8 green onions
    2 garlic cloves, crushed
    1 piece fresh ginger root (about 1 inch square)
    2/3 C (160 ml) unsalted, roasted cashews (about 3oz or 85 g)
    1/2 C water (125 ml)
    4 tsp cornstarch(20 ml)
    4 tsp soy sauce (20 ml)
    1 tsp sesame oil (5 ml)
    1 tsp oyster sauce (5 ml)
    1 tsp Chinese chili sauce (5 ml)

    Recipe



    Remove and discard fat from meat. Cut meat across the grain into thin slices about 2 inches long (5 cm). Heat half of the vegetable oil in a wok over high heat. Stir fry half of the meat.until brown, 3-5 minutes. remove from wok. Repeat for rest of meat using the oil in the wok.
    Cut green onions into 1 inch pieces (5 cm). Pare ginger and chop finely. Heat remaining vegetable oil in wok over high heat. Add onions, garlic, ginger and cashews. Stir fry 1 minute. Mix meat into into ingredients in the wok. Combine all remaining ingredients and pour over meat mixture. Cook and stir until the liquid boils and thickens.
