    • 1 set calfs brains
    • salt and pepper
    • flour or cracker crumbs
    • fat


    Instructions


    1. Soak brains in cold water for 30 minutes. Remove veins and membrane. Season, roll in flour or crumbs, broen in fat and cover skillet tightly. Cook slowly about 20 minutes.
