Broiler.Ingredients for 6 Servings.
List of Ingredients
1/2 pound lamb liver, sliced 1/2 inch thick .
2 tablespoons butter
I pound lean lamb (neck, shoulder or shank),ground
I teaspoon salt
1/4 teaspoon pepper
6 slices bacon (optional)
6 slices (about 2 medium-sized) tomatoes
Recipe
Saute liver in butter about I min�ute on each side. Turn as soon as it changes color. Cool and grind or chop very fine. Combine lamb, liver and seasonings. Shape into patties about I inch thick. Wrap a strip of bacon around each, if de�sired, and fasten with small skewer or toothpicks. Preheat broiler 5 to 10 minutes and grease broiler pan.
Place patties in pan about 2 1/2 Inches below heat source, and broil about 8 minutes on each side. Then top each patty with a slice of tomato, dot with butter and continue broiling until tomato is slightly browned, about 3 minutes longer.
