Salt and pepper to taste
6 pork chops
3 lg. sweet potatoes, peeled
Lemon juice
6 slices pineapple
12 whole cloves
12 large prunes, pitted
1/2 C pineapple juice
Recipe
Season pork chops. Brown chops in a small amount of oil in skillet. Cut sweet potatoes into halves. Rub with lemon juice. Place one potato on each chop. Top each chop with pineapple slice. Insert clove into each prune. Add prunes and pineapple juice. Cover. Cook over high heat until steaming. Reduce heat. Cook over low heat for 45 minutes.
