    List of Ingredients





    1 lb ground lamb
    ¾ cup cooked quinoa
    ¼ cup onion, finely chopped
    ¼ cup grated carrot
    ¼ cup grated zucchini
    2 cloves garlic, chopped
    1 egg, lightly beaten
    1 tsp. lemon zest
    3/4 T fresh mint, finely chopped
    1 T fresh oregano, finely chopped
    1/2 tsp ground black pepper
    1/2 tsp fine ground sea salt
    1/2 tsp dried dill
    1/2 tsp crushed red pepper
    1/4 tsp ground cinnamon

    Recipe



    Preheat oven to 450ºF. Line a baking sheet with parchment paper; set aside.

    Squeeze excess moisture out of the grated carrot and zucchini. In a large bowl, mix together all ingredients until well combined.

    Shape mixture into 16 balls and transfer to prepared baking sheet. Roast until cooked through and golden brown, 15 to 18 minutes or 165°F internal temperature.
