Lamb and Cannellini Beans

2 T olive oil
2 lamb shoulder arm chops
salt
pepper
1 medium onion, diced
2 garlic cloves, minced
1 tsp dried rosemary
1/4 tsp red pepper flakes
2 (15 oz)cans cannellini beans
1/2 C chopped tomatoesRecipe
Season lamb with salt and pepper. Heat the oil and brown the lamb in 1 T of the oil, 3-4 minutes per side. Set aside.
To skillet add remaining T oil, garlic, rosemary and pepper flakes. Cook 3-5 minutes.
Add beans, tomatoes and 1/2 cup water (or juice from tomatoes). Bring to a boil, reduce heat and simmer on medium low 3-4 minutes for medium rare.
