    Liver, Pan Broiled

    Serves 8.

    List of Ingredients

    3 pounds liver
    16 slices bacon
    bacon fat
    water

    Recipe

    cut liver into 1/4-1/2 inch slices. Remove outer membrane and any veins or blood clots. Heat skillet, lightly greased with bacon fat and sear liver on both sides, then cook slowly until as well done as desired. A little water may be added during last of cooking.
    Pan fry or broil bacon to serve with liver.
