4 loin pork chop
2 T butter
1 small onion, chopped
1 T flour
1/2C dry white wine
1/4 C beef stock
1 tsp Dijon mustard
2 tsp capers
salt

Brown chops in butter. Remove from pan. Add onions and saute. Blend in flour. Add wine and stock, stirring constantly until thickened. Add mustard and capers. Add chops and simmer 10 minutes. Season to taste
