Lamb Shanks, Rich's Mediterranean

List of Ingredients
- 2 large heads of garlic
- 1 large onion diced
- 2 T plus 1/4 C vegetable oil, divided
- 4 tsp dried thyme
- 4 tsp dried oregano
- 3-4 tsp salt + more for meat
- 2 1/2 tsp pepper + more for the meat
- 2 1/2 tsp grated fresh ginger
- 2 1/2 C canned diced tomatoes
- 1 8-ounce can tomato sauce
- 1 C water
- 6 lamb shanks
- 1/2 C all-purpose flour
- 1/2 C chopped kalamata olives
Instructions
- Peel garlic, leaving each clove whole (you should have about 36-42 cloves). Saute onion and garlic in 2 tablespoons oil until onion is translucent. Add all but the last 3 ingredients. Simmer gently for a few minutes.
- Meanwhile, season the shanks with salt and pepper and dredge in flour. Heat the remaining 1/4 cup oil in a large skillet and brown meat well. Arrange shanks in 1-2 shallow baking pans and pout the tomato mixture over. Cover and bake at 325 degrees F. for 3 1/2 -4 hours or until very tender.
- Remove shanks and pour the sauce into a large bowl. let stand a few minutes and then skim any fat that has risen to the suface. Serve with the sauce and sprinkled with chopped olives.
