    Serves 4-6

    List of Ingredients




    1 13oz can pineapple chunks
    1/2 C flour
    1/2 tsp salt
    1 pound lean pork
    1 egg, slightly beaten
    2-4 T oil
    1/2 C honey
    1/2 C vinegar
    2 T soy sauce
    1/2 C pineapple juices from can
    1/4 C ketchup
    1/4 C water
    2 T cornstarch
    1 medium bell pepper
    Cooked rice or crisp noodles

    Recipe



    Drain pineapple chunks and reserve juices. Cut pork into 3/4 inch cubes. Combine flour and salt. Dip pork into beaten egg and then flour mixture.
    Cook in hot oil 5 minutes or until crispy on all sides. Remove from pan and keep warm.
    Pour honey, vinegar, soy sauce, pineapple juices and ketchup into a pan and blend. Bring to a boil.
    Mix cornstarch in water and and add, stirring constantly. Cook until thickened. Add the pork, pineapple and bell pepper, cut into strips. Simmer 5 minutes. Serve hot over steamed rice or crispy noodles.
