    1 fresh beef tongue
    salt
    pepper
    1 onion, chopped
    2 slices bacon
    1 clove garlic, pressed and divided
    2 T butter
    flour
    2 T chopped parsley
    1/4 C vinegar
    1 C broth
    2 T honey
    2 bay leaves, divided
    1/4 C pine nuts
    1/4 C raisins

    Recipe



    Stem, boil or bake the tongue (2 hours), with the salt, pepper, 1/2 clove garlic and 1 bay leaf.
    Meanwhile, cook bacon until crisp, drain and crumble. Set aside. Saute onion with parsley, and 1/2 clove garlic. Remove from pan and set aside.
    Remove from pan and reserve the broth from cooking,reserving it, cool until it can be handled. Skin and trim the tongue. Slice it. Brown the tongue slices and return to pan with the onion mixture and bacon. Add 1 quart of broth (made from drippings in pan and liquid to make a quart), vinegar, honey, raisins, pine nuts, and bay leaf. Simmer 10 minutes. Adjust seasonings. Thicken broth with flour to desired thickness.
    Simmer slowly for 20 minutes. Dish improves if chilled 1 day and rewarmed. Serve over rice or noodles.
