ALMOND PUDDING (Mandel Pudding)

4 egg yolks
3 tbls. sugar
3 tbls. ground blanched almonds
1-1/4 tbls. plain gelatine
1/4 cup cold water
1-1/2 cups heavy cream
Cooked plums, berries or peaches
1/4 cup chopped Pistachio nuts
Recipe
Beat the egg yolks, combine with sugar, mix well. Add the almonds and stir. Dissolve the gelatine in cold water stir it in top of double boiler over heat a few minutes. Add the egg mixture and chill until it begins to thicken. Whip the cream stiff then fold into the chilled, thickened mixture. Rinse a fancy mold with cold water and pour pudding into it. Chill in refrigerator 3 or 4 hours. Unmold onto chilled dessert platter. Garnish border with bright colored fruit. Sprinkle with chopped Pistachio nutmeats.
Serves six.
