    Benlose Fugler-(veal or boneless birds)

    Cut veal into 2x4 inch pieces. Season with salt and pepper. Place a tablespoon of bread stuffing on each piece. Roll up and fasten with a toothpick. Roll in flour and brown in fat. Add milk enough to cover. Simmer 1 hour.

    Var:
    Use thinly pounded beef flank and fill with diced onion, diced cucumber and marrow from the leg bone. Use beef stock in place of milk and add a bay leaf or two with a few cloves.
