7 eggs
1 pound butter
6 C flour
1 C powdered sugar
1 C granulated sugar
2 tsp grated orange rind

Boil 3 eggs until hard, cool and use yolks only. Separate yolks and whites of 4 raw eggs. Sift flour, sugar and orange zest onto baking board and add cooked and raw egg yolks. Knead in butter until thoroughly mixed. This is important. Set dough in cool place until chilled.Break off pieces of dough the size of walnuts, roll and shape into small wreaths. Brush tops with three slightly beaten egg whites. Dip in parlsocker [pearled sugar]. Bake at 400 degrees F. until browned.
Decorate the finished cookies with a red cherry at the bottom where the wreath overlaps a little and make leaves out of green candied citron. one on each side of the cherry
