    Use fresh buttermilk in any quantity desired. Put in kettle and bring to a boil. Let simmer over a slow fire while gradually whisking in the flour,(1/2 cup to each cup buttermilk, and a little salt. Stir continuously. Cook until smooth and thickened and until flour is cooked. If not thick enough add more flour. Serve hot with butter, sugar, cinnamon and pour a little milk around it in bowls.
    [I like to use 1/2 Farina and 1/2 unbleached flour]
