Preheat oven to 375-400 degrees F.
This is a large yield of cookies.
List of Ingredients
1 3/4 C potato flour
2 1/2 eggs
2 1/3 C butter
3 2/3 C powdered sugar
rind and juice of 1 lemon
1 tsp almond extract
5 1/3 C flour
1 tsp salt
Recipe
Mix the flour salt and potato flour together with the butter, as for mixing pie crust.
Beat the eggs and add sugar, rind and juice of lemon and almond extract, then add to the flour and butter mixture. Make into rolls and chill. Slice and bake in 375-400 degree F, oven. Good keepers in airtight tins.
