    Atlantic herring (sild) can reach a length of 18 inches and 1.5 pounds.
    Pacific herring (sild) can reach a length of 15 inches.

    List of Ingredients




    2 Large salt herring
    1/2 C vinegar
    1/2 C water
    1 onion, sliced
    2 T sugar
    2 tsp peppercorns
    3 bay leaves or 2 laurel leaves
    5 cloves

    Recipe



    Cut herring into 1 1/2 inch lengths after removing skin and bones, (or fillet). Rinse in cold water. Slice the onion and alternate layers of fish and onion. Combine vinegar, water, sugar and bay leaf and bring to a boil. Add spices and pour over herring in the jar pushing the bay leaf to bottom of jar with a long chopstick. Chill and serve after 2-3 days.
