2 qts water
1 small stick cinnamon
1/2 lemon peel, chopped fine
4 T sago flour (tapioca)
3 egg yolks
3/4 C sugar
5/8 C sherry
5/8 C Rhine wineRecipe
Boil the water, cinnamon, and lemon peel (minus the white pith)for 5 minutes. Strain. Add 2 tablespoon sago flour to the liquid and boil, stirring until clear. Remove from heat. Beat egg yolks and sugar together until light, then add to hot mixture and mix well. Add the wines slowly, while stirring. Serve hot or cold.
