    Smoke house or smoker.

    List of Ingredients




    3 oz saltpeter
    1/2 pound brown sugar
    2 C table salt
    1 fresh ham
    2 oz black pepper
    1/4 pound fine ground red chili

    Recipe



    Mix the saltpeter, sugar and 1 cup salt.thoroughly. Rub it into the ham well. Keep in a cool place for 1 day.
    Rub the with other cup of salt and the black pepper mixed. Smoke over green scrub oak for 10 days. Once a day add a hand ful of juniper chips to the oak wood.
    When fully smoked, rub the chili to cover all the ham. Careful so as not to knock the chili off. Cover the entire ham in brown kraft paper and seal the paper. Make a sling of cheesecloth or muslin, and hang the ham, hock end down. Slice off amount needed and rewrap and hang.
