Recipe Introduction
Caution, the wood ash produces a lye. Use gloves.
Fill a granite canning kettle half full with hardwood ash. Nearly fill with hot water. Boil 10 minutes. Separate the water from the ash, reserving the water. Place the reserved water back into the kettle. Dispose of the ash. (lye solution is made).
Add the dent or flint corn, (field corn) in a measure of one quarter corn to three quarters lye solution. Boil until the hulls loosen. Skim the corn out. Rinse well under running water.
