1/2 cup honey
2 cups sugar
1 tbsp. vinegar
1/4 cup water
Recipe
Heat double boiler at a low boil.
Place insert pan over the bottom pan.
Add the honey, sugar, vinegar and water.
Bring to a boil, then reduce to a simmer, stirring constantly
Once it becomes harder to stir, test for hard-crack or 300 degrees F.
Add cold water to a tea cup. Drop a little thickened honey into the cold water to cool. When cool, the honey should snap immediately under pressure. If it rolls into a ball or bends instead breaking continue heating the honey and repeat the test after 1 or 2 additional minutes. Repeat testing until it breaks under pressure.
5. Remove the top pan from the double boiler. Spread into a well buttered cookie sheet to cool.
Rolling the candies in cornstarch will keep them from sticking to each other. Store in a cool, dry place.
